Day 1 of new dinners = VICTORY!

UN-STUFFED PEPPER SKILLET , from one oe my favorite cooking blogs was a huge success. Oh, and did I mention it's dirt cheap to make?  That's quite possibly my favorite part.  This one is getting added to the recipe file for sure!
